Cornmeal Cookies Se Lu I Sa U Ga Na s Da


cream together:
3/4 cup margarine
3/4 cup Sugar
add the following ingredientsuntil smooth:
1 egg
1 tsp. vanilla
add and mix well:
1 1/2 cup flour
1/2 cup cornmeal
1 tsp. baking powered
1/4 tsp. salt
optional:
1/2 cup raisins

Drop dough from tablespoon on a greased cookie sheet. Bake at 350 Degrees
about 15 minutes until lightly browned

Butter Cookies

Ive been really slow at doing everything for Christmas this year. I still havent finished shopping, I didnt send out any cards, I didnt get to make edible gifts like I thought I would BUT I did find the time to bake some Christmas Cookies with my sister, Danielle and her three beautiful children, Sofia, TJ and Emily. We had a rough start and had to make a couple of runs to the store to replace a broken hand mixer and a missing cookie press but alls well that ends well. We had a great time, the kids had fun decorating the cookies and eating them!

This recipe has been in my family for years. Im not sure where my mother got the recipe from but its been around for as long as I can remember. Usually we use a pastry cutter to mix the dough but we tried using a hand mixer and found that the cookies were much lighter and softer. I will definitely use a mixer from now on.

Butter Cookies


1 cup confectioners sugar
2 sticks butter
2 eggs
3 cups all purpose flour
1 tsp. baking powder
3 tsp. vanilla

Cream butter and sugar until well blended. Add eggs and vanilla. In a seperate bowl mix flour and baking powder. Add dry ingredients to butter sugar mixture a little at a time until all the flour is incorporated.

If you would like add food coloring to a portion of the dough or all of the dough. We like to do different colors for different shapes so we mix the color in batches. Add dough to cookie press and follow directions to press cookies.

Decorate with sprinkles, chocolate chips or whatever you like.


Bake at 350 for 10-15 minutes.

Currant cookies Kúrenukökur

I dont particularly care for these, as I dont like raisins in food and the currants remind me of them, but my grandmother loves them.

375 g butter, softened
375 g sugar
7 eggs, yolks and whites separated
a few drops of lemon essence
500 g flour

For decoration:
Currants, chopped blanched almonds, extra sugar (no amounts are given in the original recipe)

Cream sugar and butter, then add the egg yolks one by one, mixing well in between. Gradually add the flour, then the lemon essence. Whip the whites separately until stiff and fold into the dough.

Put the doughonto a baking sheet and spread evenly over the sheet, using a spatula. Sprinkle a mixture of currants, almonds and sugar on top. Bake at about 180°C until golden and cut into squares while still warm.

Ingredients
  • Butter 4 ounces
  • Brown sugar 1 cup
  • Vanilla essence 1 tsp
  • Soda by carb 1 tsp leveled
  • Eggs 2
  • Flour 2 cups heaped
  • White chocolate chips ½ cup
  • Dark chocolate chips ½ cup
Method
  • In a bowl add butter with brown sugar, soda by carb, vanilla essence, beat for 2 minutes till light and fluffy, gradually add one egg, beat well add in second egg, w=beat well, fold in fliour with chocolate chips using a cookie scoop, put cookies on a foil lined tray, bake on 180 degree c for 12 to 15 minutes.

Crunchy Almond Butter Chocolate Chip Cookies


Our latest variation on a theme- crunchy almond butter chocolate chip cookies. Why another gluten-free chocolate chip cookie recipe? There are so many reasons, Darling. In fact, where do I begin? First. The obvious. The duh. One can never have too many cookie recipes. Especially in our polite, don't want to make a fuss, look-don't-taste universe when one has to live gluten and dairy free, shunning wheat flour, cream and butter. Declining pink birthday party cupcakes and adorable custard tartlets and cream cheese on bagels and examining every ingredient label ad infinitum. 

How do we survive in a culture that promotes our poison everywhere we turn?

CHRISTMAS SPRITZ COOKIES



Butter Spritz cookies are a classic, sweet, crisp (and light as a feather) cookie. They go together in a snap and when they are decorated with a little piece of candied cherry in the center (or any other holiday decoration you can think of), they are pretty enough for any Christmas cookie tray.

1 ½ cups butter
1 cup granulated sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla
½ teaspoon almond extract (see note)
3 ½ cups all purpose flour
1 teaspoon baking powder

PREHEAT OVEN TO 375°. Thoroughly cream butter and sugar; add egg, milk and extracts and beat till smooth. Add flour and baking powder and mix until you have a nice thick, smooth dough. DO NOT CHILL IF YOU ARE GOING TO USE A COOKIE PRESS.

Place dough into cookie press and press cookies onto Ungreased cookie pan. Bake 10-12 minutes or until slightly browned around the edges. Cool cookies on a rack. Makes 7 to 8 dozen cookies (they are small).

NOTE: I sprinkle the cookies with sugar before baking, but you dont have to.

NOTE:  I make a variation of these that is Picky-picky Hubbies favorite. I omit the almond flavoring and instead, I add a full teaspoon of coconut extract. The final cookie doesnt taste like coconut, but it DOES have a wonderful sweet holiday taste, a lot like those Danish shortbread cookies that come in the round tin at Christmas (?)....very good.

NOTE: If you don’t have a cookie press, you can roll this dough into a log then roll the log in finely chopped nuts or sprinkles (pressing the nuts (or sprinkles) into the surface a little). Wrap the log in plastic wrap. Chill in fridge then slice and bake cookies until slightly golden.

Oatmeal Chocolate Chip Cookies

1/2 pound (2 sticks) margarine or butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
3 cups uncooked oats
1 cup chocolate chips

1. Heat oven to 350 degrees F.
2. Beat together margarine and sugars until creamy.
3. Add eggs and vanilla; beat well
4. Add combined flour, baking soda, cinnamon, and salt; mix well.
5. Stir in Oats and Chocolate chips; mix well.
6. Drop by rounded tablespoonfuls onto ungreesed cookie sheet.
7.Bake 10-12 minutes or until golden brown.
8. Cool 1 minute on cookie sheet; remove to wire rack.

About 4 Dozen
Bar Cookies: Bake 30-35 minutes in ungreased
13x9-inch metal baking pan
