Asparagus Pachai poriyal Asparagus stir Fry

Many of my readers will be wondering how I managed to get Asparagus in India. Yes,this is a new veg for me,which I saw in a Korean store H mart in DC. I am in US now eagerly waiting for the arrival of my first grandchild. Till the bundle of joy arrives, I thought of experimenting some from the variety of new vegetables available here.I tried quite a few. The most easiest and tastiest was this Asparagus fry. Many will be thinking why I call this pachai poriyal. We usually call a fry Pachai, if no chili powder is used and is cooked little less. Some of the facts that I found from the net about this vegetable is
Asparagus is a nutrient-dense food which in high in Folic Acid and is a good source of potassium, fiber, vitamin B6, vitamins A and C, and thiamin.

IngredientsAsparagus-2 bunches
Big onion-1(minced)
pepper powder-1 teaspoon
Turmeric powder-1/2 teaspoon
lemon juice-1 teaspoon
Procedure
Take off the bottom and top 1 inch portion from the asparagus. Cut it as shown in the picture. Mix the lemon juice, pepper powder, turmeric powder and the salt needed and keep aside for 10 minutes. Keep the kadai in the stove. Season the fry with a teaspoon of cumin seed and saute the onion for few minutes. Now add the asparagus and mix well. Dont add any water. Cook just for 5 minutes (till the water in the fry is gone).

Egg stir fry scrambled egg in Indian style Egg bhurji
Egg bhurji is very simple and quick dish. I would love to have it any time. I love it especially for rotis. It makes wonders with simple ingredients and delicious taste. It is very easy dish for the beginners to learn. I often find hostelers cooking it very often. It is perfect recipe for the bachelors. Now coming to the recipe.

Ingredients:
Eggs-6
Chopped onions-1/4cup
Green chillies-2
chopped cilantro-2t.s
Cumin seeds-1/2ts
Mustard seeds-1/2ts
Chana dal-1tbsp
Urad dal-1 tbsp
Turmeric-Pinch
Salt to taste
Chili powder-1/2tbsp
Red chili-1
vegetable oil-2ts
Directions:
Heat 2ts of oil in non stick pan and add cumin + mustard + chana + urad dal+ red chili and wait until they splutter. Add onions, Ginger Garlic paste and saute until they the onions become transparent. Add turmeric and cook for few min and add red chili powder &salt to taste. You can add cumin & coriander powder to spice up the curry. Mix all the ingredients well and finally break open the eggs and add, do not stir immediately. Wait till the bottom is well cooked them slowly stir the contents and mix them. It will get cook very soon so keep under medium flame, if you cook on high flame the outer part cooks and inner remains raw. so, be careful while cooking. when egg is completely cooked add cilantro and enjoy with rice/roti.

Easy Vegetable Stir Fry Recipe
This vegetable stir fry recipe is easy to cook and very healthy.
I use a combination of sweet red and green peppers with fruity zucchini and Brussels sprouts that taste almost sweet once cooked in this way.
I season my vegetable stir fry recipe using garlic paste and soya sauce, also you can add some of your favourite chilli sauce at the end if you want an extra spicy kick.
Ingredients for Jeenas Vegetable Stir Fry
1 Red Pepper (sliced)
1 Green Pepper (sliced)
2-3 Handfuls Brussels Sprouts (sliced)
1 Large Mushroom (sliced)
1 Zucchini (strips)
1 Tbsp Garlic Paste
Few Drops Soya Sauce
Chilli Sauce (optional)
Rapeseed Oil
1 Red Pepper (sliced)
1 Green Pepper (sliced)
2-3 Handfuls Brussels Sprouts (sliced)
1 Large Mushroom (sliced)
1 Zucchini (strips)
1 Tbsp Garlic Paste
Few Drops Soya Sauce
Chilli Sauce (optional)
Rapeseed Oil

How to make an Easy Vegetable Stir Fry Recipe
Heat some oil in a large pan.
Add zucchinis and cook for a few minutes, stir often.
Add peppers, stir well.
Add sprouts keep cooking and stir well.
Add mushrooms, keep stiring well.
Once all vegetables are softened add garlic paste and soya sauce.
Cook for a few more minutes until the garlic is cooked.

Once the vegetable stir fry is cooked you can add some of your favourite chilli sauce to it if desired.
