More Fashion Forward Cupcakes

This week kicks off our countrys favorite past time. Theres sweat, blood, tears, and lots of hair pulling. Im speaking, of course, of New York Fashion Week. And what event that holds beauty and taste above all else would be complete without a specially-designed cupcake?

Behold, Fashion Weeks most delicious trend: the Fashion Night Out cupcake, available exclusive at Crumbs 12 New York City locations. Its a vanilla cupcake, filled with chocolate cream cheese frosting topped with light green frosting, pink and white hearts, and a heart-shaped sugar covered in pink sanding sugar. 

At $4 a pop, it even comes with a designer price tag. With 20% of it going the New York City AIDS Fund in the New York Community Trust, you can finally feel good about being a label whore.

Strawberry Peach Basil Cupcakes

By now, it should be quite evident that Im smitten with filled cupcakes. Though some, Id rather forget.

Im a frosting person, so I like to get my moneys worth. Plus, they look super pretty when theyre cut in half:
This is a vanilla buttermilk cupcakes filled with peach jam, strawberries and basil, topped with vanilla pudding peach/strawberry/basil infused frosting, and drizzled with peach/strawberry syrup. 

Look, Im creative okay? I have red hair (big ups to my colorist). I write a blog. I live in the city. I wear big jewelry! But how people come up with these concoctions will never cease to amaze me!

This comes from the lady at Beantown Baker (link NSFW--Not Safe For Waistlines). This week shes been doing nothing but making cupcakes. Swoon. She doesnt have the formal recipe written out, but she does a really good job explaining how she made it.
Listen, Ive spent the better part of my lunch hour looking at her blog, and all I can say is, I would give my right arm [jewelry] to have one of these. I can find another ring, but you tell me where I can find another strawberry/peach/basil stuffed cupcakes, mmkay?

Pumpkin Cupcakes with Maple Cream Cheese Icing

Before I get to my pumpkin cupcake recipe, I need to wander off a bit. Just briefly. Because it's who I am. A person who wanders. Ponders. Finds solace in books. I've been like this since girlhood. Curious. Serious. No good at catching balls. Or dressing dolls. I am beyond inept with hair. And eyeliner. Nail polish. I get anxious and non-verbal if I have to wear anything that isn't a pair of jeans.

It might be because I'm a child of The Sixties, that starstruck Age of Aquarius, when kindred souls united for peace, beauty, and rock and roll. As Hunter S. Thompson wrote, "You could strike sparks anywhere. There was a fantastic universal sense that whatever we were doing was right," and there was that "...sense of inevitable victory over the forces of Old and Evil. Not in any mean or military sense; we didn’t need that. Our energy would simply prevail. There was no point in fighting—on our side or theirs. We had all the momentum; we were riding the crest of a high and beautiful wave."

I've been remembering the beautiful wave lately. The idealism. The hope. The belief that there is more to life than collapsing in front of the television and microwaving hot dogs. The belief that beauty- as Steve Jobs believed- is important, has value. That we are deeply interconnected. That life on Earth is precious- from the house sparrow to the living sea. That we are part of a vast and mysterious collective- not merely of our absurd egos (who natter inside our heads and squander our attention on drama, conflict, acquisition and the need to control)- but of a newly unfolding awareness of astonishing inner space and outer space. Infinity in every direction. The Universe is far more capacious than we ever dreamed. Perhaps even multi-dimensional. A Multiverse.

Which begs the question.

Who am I? Really. I know I am not the car I drive or the laundry detergent I use. I know I am not what I identify with. I am not what I embrace- or reject. Though for years I thought so. I believed my opinions created a self. Made me Me. Now that I am old enough to have lived through countless opinion reversals, I realize opinions are temporary.

And not defining.

Just as I am not my baby teeth. Or my once lactating voluptuousness. Or my sprouting silver hair. Or what music I listen to. Or what jeans I outgrow. I am not even the woman baking pumpkin cupcakes for her readers. Or am I?

Well, maybe I am. Just a little. But wait. Doesn't that make me the sum of what I do? I bake therefore I am? I am trying lately not to be so much of a human doing. And more of a human being.

It's not as easy as one might think.

And therein lies the trouble. The whole thinking thing. Our brain. Our wired hardware. It disconnects us. It addicts us. It overrides the heart and soul of what is really going on. The being we really are. Beneath the seductive and glossy surface of things. The spark that burns from the greater whole.

I see that spark in you. In your words and comments. In your avatar's eyes.

And that spark?

It's why I made you cupcakes.

Gluten Free Vanilla Cupcakes Recipe with Mocha Icing

The world is my oyster. No. Wait. I'm allergic to oysters. At least that is what a blood test declared, four years ago. Puzzling. I never had any symptoms. That I recall. Though who knows. I haven't actually eaten an oyster in (...let me count), maybe 17 years. They were fried oysters. At a jumping local hang-out on the Cape. The Land Ho in Orleans. Famous for grilled burgers, golden dipped fish and chips, fried clams. And yeah. Oysters. And beer. Truth is, I would much prefer a cupcake. No slimy, muscular middle. No fishy liquor. Just tender, soft sweetness in exactly the right portion. Not too big. Not too heavy. Not too much.

Just right.

As you may have guessed, I have issues (who among us doesn't?). Texture is a big honking issue for me. Size is an issue (portions bigger than my head? A  serious turn off). And taste, well, that goes without saying (you know how I loathe bean flour). If I was a storybook character I would inhabit The Princess and the Pea.

Sunny Sweetness with a Twist

On my To-Do List for nearly forever has been creating a gluten-free vegan recipe for my favorite birthday treat- a fresh and fragrant orange cake with orange creme frosting. Since it isn't my birthday until June (and it's just the two of us living out here in the Connecticut hills) I decided to experiment with making cupcakes instead of a layer cake. 

Orange cupcakes just sounded refreshing.

Sunny and sweet.

I had such a good time in the kitchen this week making these sweet little gems. In fact, I'll be working on more recipes for vegan cupcakes in the near future, including basic vanilla cupcakes, chocolate cupcakes, carrot, perhaps, and a few other tasty flavor combos.

Now that I know how easy it is to bake delicious gluten-free vegan cupcakes, the sky's the limit.

Valentines Day Cupcakes


This year, surprise your Valentine with a delicious homemade treat. Here I have a great cupcake recipes to help spread the love this Valentines Day.



     Ingredients:

4 eggs
1 2/3 cups sugar
1 cup vegetable oil
15-ounce can applesauce
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt



   Ingredients for cream: 
1 cups heavy whipping cream 
1/2 cup milk 
1/2 pkg. (3 oz) JELLO-O Vanilla Flavored Instant Pudding 
4 oz mascarpone cheese 
1 tsp vanilla extract 
2 Tbsp. Napoleon brandy or your favorite rum liqueur 
1 Tbsp. powdered sugar 
Food coloring, optional

    Direction for cream: 
Combine mascarpone cheese with vanilla, powdered sugar and of brandy in a bowl and beat with electric mixer until combined and creamy for about 1 minute. Gradually add in heavy cream. Whip for a few min until cream becomes thicker. Then add milk and dry pudding mix, beat until it becomes stiff consistency. 


Preheat the oven to 325˚F. 
In the bowl of a mixer fitted with the paddle attachment, combine the eggs and  oil. 
Add apple sauce and salt. 
Add sugar and mix. 
 In a separate large bowl, combine the flour, baking powder, cinnamon and baking soda.  Whisk until thoroughly incorporated. 
Without over-mixing, gradually stir in the dry ingredients into the wet ingredients until just combined. 
Pour into the prepared cupcake liners. To make a heart shaped cupcake put a marble or beans between the liner and pan. 
Bake on 325 F for 20 to 30 minutes or until it passes the toothpick test.(Note: All ovens are different, always check before time expires when you are baking)   Let cool completely on a wire rack before frosting. Makes 24 regular size cupcakes.  
 Make cream add food coloring. 
Use a star tip to make hearts. I made a small heart first then another around it.

Racist Cupcakes Foreshadow the Rise of the KakeKakeKake

Last week, boxed-cake-mix-maker Duncan Hines was forced to pull its latest marketing gimmick from the airwaves after a public outcry labeling Duncan Hines as "racist."

Entitled "Hip Hop Cupcakes", the commercial features unfrosted (presumably preservative-laden Duncan Hines) vanilla cupcakes, seemingly coming to life as a headless actress drizzles even more preservative-laden chocolate sauce atop the cupcakes, who then sprout cartoon eyes and lips, and begin to "sing" probably the best hip-hop music Ive ever heard in my life.


Lets get one thing straight: I hate racists and racism. Other things I hate: Glee hiatuses, red peppers, and buying shoes at full price only to see them go on sale the next day.

Now that Ive solidified my politically correctness, lets get real here--the hip-hop that Duncan Hines speaks of sounds more like the musical ramblings of a 14-year-old who just tinkered around with Garage Band for the first time. I try not to listen to any music that doesnt sound like itd be the color pink, but Im still pretty sure hip-hop is owned by the likes of Jay-Z and CB4. I mean, honestly, this "rap" isnt even half as edgy as the kind of songs performed on "The Sing Off".

And yet somehow, people are PISSED!!! Its reminiscent to a large population of people with way too much time on their hands and not enough real problems to worry about of the actual racist practice of black face. Add in the idea of hip-hop and clearly you have a whole new clan of racism forming--the KakeKakeKake.

Look, the real problem here is two-fold: Duncan Hines is horseshit and their ad team is clearly a group of third-graders who have a thing for Chipmunk voices and cartoons. I guess when you think of it like that, its actually quite a sophisticated ad campaign.
