Hyderabadi mutton masala
Hyderabadi mutton masala

Ingredients
- Mutton ½ kg
- Raw papaya grinded 1 tbsp
- Ginger garlic 1 tbsp heaped
- Salt 1 tsp
- Chili powder 1 ½ tsp
- Poppy seeds roasted and grinded 1 tbsp
- Sesame seeds roasted and grinded 1 ½ tsp
- Desiccated coconut roasted and grinded 1 ½ tsp
- White cumin whole roasted and grinded 1 ½ tsp
- Peanuts roasted and grinded 1 tsp heaped
- Coriander seeds roasted and grinded 1 tsp
- Roasted gram 1 tsp
- Yogurt 1 cup
- Brown onion grinded 2 to 3 tbsp
- Oil ½ cup
- Whole button red chilies 6
- Cumin seeds ½ tsp
- Curry leaves 12 to 15
- Roast and grind all the seeds, marinate mutton with grinded masala, ginger garlic, salt, papaya, chili powder, yogurt and brown onion, heat oil add baghar, add marinated mutton, cover and cook on low flame for 40 to 45 minutes, serve with paratha or nan.

Hara masala pasanday

Ingredients
- Pasandy ½ kg
- Onion 1 large sliced
- Green chilies 15
- Coriander leaves ½ bunch
- Black pepper whole 1 tbsp
- Yogurt 1 cup
- Ginger garlic 1 tbsp
- Salt 1 tsp heaped
- Lemon juice 2 tbsp
- Oil ½ cup
Method
- Put Onion 1 large sliced, Green chilies 15, Coriander leaves ½ bunch, Black pepper whole 1 tbsp, Yogurt 1 cup, Ginger garlic 1 tbsp, Salt 1 tsp heaped, Lemon juice 2 tbsp in a blender and blend to a fine paste, marinate your pasanda with this blended masala, leave it for 2 hours, heat oil add in marinate mixture, cover and cook until done and thick gravy left. Serve garnish with French fries.

Masala Utappam with left over Idli batter Award time
Utappam!!!!!
I love having it for my breakfast /luch/dinner. This is made by different people in different ways. I though when can make masala dosa, why cant we make masala utappam? and now my experiment yielded fruitful results and my masala utappam is ready.
Ingredients:
Left over IDLI batter ( Click Here for IDLI recipe)
Potatos boiled and pealed and sliced-2cups
Onions chopped-1cup green peas-1cup
green chilis /pepper- chopped-2ts
Salt to taste
Cumin seeds few
Mustard seeds few
turmeric -1/8ts
Method:

Method:
For masala Curry:
- Take a skillet and heat 2ts of oil in it and add cumin + mustard seeds and wait until they crackle.
- Now add onions, green peas and green chili and saute until the onions turn transparent.
- Add turmeric and saute for 1min under medium flame.
- Add potato and mix well, finnay add cilantro (its optional).
Masala Utappam:
- Take the left over Idli batter and add water if required, the consistency of the batter should be very soft.
- Check for salt.
- Now heat pan and scoop out one big spoon full of batter and pour it on a pan and spread the barre thin, just like you spread dosa.
- Add oil on the sides of utappam.
- Now scoop out some potato curry and add on the top of the utappam.
- cook under medium fame till the bottom of the utappam attains golden brown and turn it on the another side. Cook this side for about 1min.
- Now the utappam is ready to serve with sambar and coconut chutney.

Tandoori chicken legs Drumsticke with barbeque masala
Chicken legs---7
Curd/Yoghurt---1cup
Tandoori barbecue/barbeque masala----4ts
salt to taste
chili powder---1ts
coriander powder--1ts
Lemon juice---4ts
paprika/red color--pinch
onions, cilantro and lemon for garnishing
Ginger garlic paste-2ts
Zip lock bag
Method:
- Remove skin and clean the chicken drumsticks.
- Make 6-7 deep cuts on each drumstick and keep aside
- Now prepare marination by adding all ingredients(Curd+BBQ masala+salt+chili powder+coriander powder+lemon juice+color) in a large bowl and beat them till it attains uniform color.(2-3min)
- Now coat each drum stick with this masala.
- Add remaining marination along with drum sticks in to zip-lock bag and close the bag.
- Mix by turning bag upside down 2-3 times.
- Keep this in the refrigerator and incubate overnight.(or minimum 2-6hrs)
- Next day, take the drumsticks out of the bag and place it on the tray that is warped with aluminium foil and greased with oil.
- Bake at 500F for 20-25min turning at regular intervals.
- Remove the drum sticks from the baking tray and arrange in plate and garnish with onions, cilantro and lemon.
- Enjoy with rice as a side dish/ have like evening snack.

Ingredients
- Potatoes boiled and coarsely mashed 4
- Anar dana 2 tsp crushed
- Lemon juice 2 tsp
- Brown onion crushed 2 tsp
- Coriander leaves chopped 2 tbsp
- Mint leaves chopped 1 tbsp
- Crushed red pepper 2 tsp
- Allspice ½ tsp
- Salt 1 tsp
- Chat masala ½ tsp
Ingredients for batter
- Gram flour 1 cup
- Salt ¼ tsp
- Soda by carb ¼ tsp
Method for batter
- Make into a smooth thcikish batter with water.
Method for wada
- Put all in a bowl and mix well, make into balls, dip in prepared batter and deep fry.

Oven masala chicken
Oven masala chicken

Ingredients:
- Chicken leg 3
- Yogurt 250 grams
- Red food color few drops
- Turmeric 1 tsp
- All spice powder 1 tsp
- Cumin powder 1 tsp
- Red chili powder 1 tbsp
- Nutmeg/mace powder ½ tsp
- Ginger garlic paste 2 tbsp
- Ghee 2 tbsp
- Lemon juice 2 tbsp
- Onion for garnishing
- Coriander leaves for garnishing
- Salt to taste
Method:
- Place tikka cuts on the chicken leg piece and open the joint of leg with the help of knife.In a bowl take 250 grams yogurt, 1 tbsp red chili powder, 1 tsp cumin powder, 1 tsp hot spice powder, 2 tbsp ginger garlic paste, few drops of red food color and ghee and mix well.
- Marinate chicken leg piece with little bit of salt and 2 tbsp lemon juice.Now marinate with ½ tsp turmeric, little bit from ½ tsp of nutmeg/mace powder and keep it baking tray and bake for 10 minutes on 180c.
- Then marinate with the left masala and bake for 6-7 minutes.As it gets golden serve with salad leaves. Garnish it with chopped coriander and onion rings.
